Mexican Street Corn Brats
Prep: 10 minutes   Cook: 15 minutes   Serves: 8

 

2 ears fresh sweet corn, husked

2 tablespoons mayonnaise

2 packages (14 ounces each) FUD® Smoked Sausage

1 garlic clove, minced

2 tablespoons FUD® or La Chona® Mexican Style Sour Cream

1 tablespoon fresh lime juice

1 teaspoon ancho chili powder

1 teaspoon lime zest

½ teaspoon ground cumin

8 hot dog buns

1 ounce FUD® or La Chona® Grated Cotija Cheese (¼ cup)

2 tablespoons fresh chopped cilantro

8 lime wedges (optional)


INSTRUCTIONS

  1. Prepare outdoor grill for direct grilling over medium heat. Brush corn with mayonnaise. Place corn on hot grill rack; cook, covered, 15 minutes or until charred, turning occasionally. Place sausages on hot grill rack; cook, covered, 8 minutes or until charred, turning occasionally.

  2. Cut corn from cobs. In medium bowl, whisk garlic, sour cream, lime juice, chili powder, lime zest and cumin; fold in corn. Makes about 1¼ cups.

  3. Serve sausages in buns topped with corn mixture sprinkled with cheese and cilantro; garnish with lime wedges, if desired.
